Delicious Stuffed mushrooms

Preparation time: 10minutes                   Cooking time: 20minutes                makes 4 Large mushrooms

INGREDIENTS:

4 extra large flat mushrooms
2 tablespoons garlic - to spread
3 tablespoons butter - to spread
1/2 red pepper - deseeded & finely chopped.
1/2 yellow pepper - deseeded & finely chopped
block/triangle of brie - cut into either thick strips or medium sized blocks
a handful of feta - cut into either blocks or crumbled over mushrooms
2 handfuls of cheddar - grated
1 avo - optional
freshly ground salt & pepper
garlic & herbs spice - seasoning

METHOD:

Preheat oven at 180
Wash the mushrooms and place them on a flat oven tray/baking tray
we buy organic fruit & veg, so its always on the earthy side. The black bits on the top of the mushroom, wash those off, they're clumbs of sand & dirt.
Spread butter generously on the inside of the mushrooms and sprinkle salt, pepper and garlic & herb
butter soaks into the mushrooms and gives them a rich taste.
Spread garlic over the layer of butter
im not too shy with the garlic, once all the other ingredients are added, the taste becomes very subtle, so lay it on.
Place mushrooms onto the tray and slide into the oven for 3-5 minutes
watch as the butter melts into the mushrooms
Remove the tray & added the peppers evenly over the mushrooms
easy enough, if you dont burn yourself like i did.
Place tray back in the oven to allow the peppers to simmer for another 5 minutes
this is just to soften them
Remove tray & add the brie evenly, place tray in oven and allow the cheese to melt for 5-7minutes
allows the cheese to melt & soak into the mushrooms
Add the feta cheese and leave let that soften for 3-5 minutes
some of the cheeses will melt into the mushroom and others are just softened.
Sprinkle the cheddar over the mushrooms so that it covers all the other ingredients and grill for 5 minutes
before putting on the cheddar, change the oven setting to grill, which i forgot, but it still tastes the same
Slice avo and place a few slices on each mushroom and serve.

This recipe is curtecy of my pops 7 he likes to add chicken or bacon, which you can do if this is more of a main or if you want it to be more filling.
Add a side salad and you have the perfect starter.
